When I think of making a cheesecake, want to know what comes to mind first?  Takes too long to make, too many ingredients, and most importantly it has way too much sugar in it.  Well my Hollywood Keto cheesecake recipe only has 8 ingredients with very little prep time and has zero sugar?  It’s also gluten free which and of course low carb.

I have to give credit where it’s due.  So I had a slice of cheesecake a few months back at the Cheesecake Factory in King of Prussia PA.  I had no idea a cheesecake could be low carb and keto friendly.  Of course I was on a mission every since to make my own because after all who doesn’t like cheesecake?

Trust me this recipe is not hard to follow at all.  If I can do it then anyone can.  If you’re here for the recipes but still new to keto then make sure to check out my “Where to Begin” keto guide.  I made a promise to my keto following that I would make their experience as easiest and informative as possible.  With that being said let’s jump right into this delicious recipe.

Instructions

1.) Ok first things first.  Let’s preheat the oven to 350 degrees F.  Grease a 9 inch cake tin.  You can use a dish if you don’t have a cake tin and you don’t mind square pieces.

2.)  In a bowl mix the almond flour with the melted butter and the granular erythritol and vanilla extract.  Mix well until it looks like a cookie crumble.

3.)  Dump in the dish or cake tin, spread evenly and slightly push down and make smooth.

4.)  Bake the the crust in the oven for about 12 minutes or until slightly brown on the edges.  While that is going you definitely should get started on the filling.  (take the crust out after 12 minutes let sit and cool)

5.)  In a mixing bowl beat the cream cheese and the powdered erythritol until smooth and fluffy.

6.)  Add the eggs to the mix 1 by 1 while beating.

7.)  Lastly add and beat the extract and lemon juice.

8.)  Spread the filling out evenly over the crust and bake at 350 for 50 minutes.

9.)  Once it is finished let cool to room temperature then cover and refrigerate.  I left mine in the frig for 6 hrs but this is to your discretion.

*Sauce and fruit are optional.

Serving size is 1 slice.  Weigh it on a food scale for precise weight and accurate macros.

Macros:  319 calories – 30g fat – 9g protein – 3g net carbs.
