Simple Slow & Low Keto Turkey Soup

A good turkey soup has plenty of ground cooked turkey obviously.  However it also has uncooked barley, which is an F when it comes to the keto grading system.  So wanna guess what I substituted the barley with?  If you guess cauliflower rice then you would be incorrect.  Although I do use cauliflower rice a lot in my dishes.

Ok I will end the suspense!  The answer is Walnuts..  Walnuts ended up going really well with this snack.  I also want to mention even though I list all my soups as snacks, they definitely can be a lunch or a dinner depending on your portion size.

Ingredients:

2 lbs of ground turkey, cooked and drained
1 can (28oz) whole tomatoes undrained ( brand is keto whole canned by compliments brand)
2 cans (14oz each) beef broth
1 bag (16oz) of frozen mixed vegetables
1/2 cup of walnuts
1 teaspoon of himalayan salt
1 teaspoon of dried thyme leaves
1/2 ground black pepper

Directions:

Combine all ingredients in your crock pot.  Add water to cover.  Cover the crock pot and cook on high for 3 to 4 hrs or until chopped walnuts and veggies are tender.

Marcos:

per serving or bowl 13 grams of fat, 17 grams of protein, 4 carbs, 160 calories
